Prosciutto And Egg Panini Recipe

Ingredients
  • 1/2 tsp kosher salt .
  • 8 large eggs .
  • 4 soft sandwich buns, halved lengthwise .
  • 8 oz prosciutto, thinly sliced .
  • 1/4 tsp black pepper .
  • 8 oz swiss cheese, thinly sliced .
  • 2 tbsps unsalted butter

Directions
  • Step #1 In a small bowl whisk together the eggs, salt, & pepper.
  • Step #2 Melt 1 tbsp of the butter In a large-ish nonstick skillet over med-heat/flame.
  • Step #3 Pour in the eggs & scramble until cooked through.
  • Step #4 Divide the eggs among the bottom halves of the rolls.
  • Step #5 Add the prosciutto & cheese & sandwich with the tops of the rolls.
  • Step #6 Melt the remaining butter in a grill pan or large nonstick skillet over med-heat/flame.
  • Step #7 Add half the sandwiches to the skillet.
  • Step #8 Cook, until the cheese has melted & the bread is golden, pressing frequently with the back of a spatula or placing another pan on top of the sandwiches to weigh them down, 4 to 6 mins.
  • Step #9 Repeat with the remaining sandwiches.
