Chicken, Soy & Honey Parcels With Rice Recipe

Ingredients
  • 4 tbsps mirin or dry sherry .
  • 200 g water chestnuts, sliced .
  • 5 cm gingerroot, fine shreds .
  • 2 garlic cloves, finely sliced .
  • 4 tsps clear honey .
  • 4 tbsps soy sauce .
  • 4 shallots, thinly sliced .
  • 200 g rice .
  • 4 spring onions, shredded .
  • 4 boneless skinless chicken breasts

Directions
  • Step #1 Preheat oven to 180°C.
  • Step #2 Cook rice according to packet directions.
  • Step #3 Meanwhile, cut out four 30cm foil wrap squares.
  • Step #4 Put a chicken breast onto each square & top this with a sliced shallot each.
  • Step #5 Bring the foil wrap sides up around each & seal at the short ends.
  • Step #6 Put 1 tbsp of soysauce, 1 tsp honey, & 1 tbsp mirin into each packet.
  • Step #7 Divide the shredded ginger & minced garlic among the packets.
  • Step #8 Seal the packets.
  • Step #9 Put the packets on a baking sheet & bake for 20 mins, or until cooked through.
  • Step #10 Mix the spring onions & water chestnuts into the cooked rice & put onto 4 plates.
  • Step #11 Slice the chicken breasts & arrange on top of the rice & serve.
