Easy Grilled Mojito Chicken
Ingredients
1/2 c onions, sliced .
1 large onion, sliced into 1/2-inch rounds .
2 tsps dried oregano .
1 tbsp ground black pepper .
2 tsps cumin .
1/4 c sliced garlic .
2 c fresh orange juice .
Marinade (use 1 c for chicken) .
Chicken .
2 tbsps fresh Italian parsley, sliced .
8 pieces chickens .
1 tbsp fresh cilantro, sliced .
1/2 c fresh lime juice .
1/2 c olive oil
Directions
Step #1 To make the marinade:.
Step #2 Mix the garlic, onions, orange & lime juices in a bowl.
Step #3 Heat the olive oil In a large-ish saucepan until just smoking.
Step #4 Cover up your arms & put on potholder mitts.
Step #5 Slide the contents of the bowl into the hot oil – be very careful because the liquid will spatter.
Step #6 Simmer for 5 mins.
Step #7 Spice up the marinade with the rest of the ingredients.
Step #8 Pour everything into a mixer or food processor/blender & pulse 3 times to mix.
Step #9 Pour into a plastic container & cool to room temp; then cover & put in the fridge.
Step #10 Will keep for up to 2 weeks.
Step #11 To make the chicken:.
Step #12 Spread the chicken out in a baking dish & pour the marinade over it.
Step #13 Rub some of the marinade under the skin.
Step #14 Marinate the chicken for 4 hrs or overnight in the fridge.
Step #15 Turn the oven onto 375.
Step #16 Scatter the onion over the bottom of a roasting pan, & put the chicken on top, skin side up.
Step #17 Pour the remaining marinade over the chicken & roast for 1 hr & 15 mins, til the chicken is golden & cooked through.
Step #18 Serve the chicken with pan juices & sprinkle with parsley to garnish.
Step #19 If desired, squeeze lime wedges over chicken.
