Lemon Chicken Soup Recipe

Ingredients
  • 3 c low sodium chicken broth (recommended brand Swanson's) .
  • 3 egg yolks, lightly beaten .
  • 3 (10 oz) cans chicken & rice soup, condensed (recommended brand Campbell's) .
  • 1 roasted chicken breast, shredded (cooked, store-bought) .
  • 1 tbsp fresh parsley leaves, finely sliced .
  • 1/3 c lemon juice

Directions
  • Step #1 In a medium pot, add condensed chicken & rice soup, chicken broth & lemon juice.
  • Step #2 Bring to simmer over medium-high heat,.
  • Step #3 In a small bowl, lightly whisk egg yolks.
  • Step #4 *Slowly whisk in 1/4 c of the hot broth into the egg yolks to prevent curdling.
  • Step #5 * Gradually add the egg yolk mixture into the soup, STIRRING CONSTANTLY.
  • Step #6 Stir in shredded chicken & heat completely.
  • Step #7 Serve & garnish with a pinch of fresh parsley if desired.
