Slightly Different Meatloaf Recipe

Ingredients
  • 1 tbsp margarine .
  • 1 small onion, finely sliced .
  • 2 tbsps parsley, finely sliced .
  • 2 tsps lemon juice .
  • 1/3 c milk .
  • 1/4 c worcestershire sauce .
  • 1/2 c ketchup .
  • 250 g veal mince .
  • 500 g sausage meat .
  • Meatloaf .
  • 1 tbsp instant coffee .
  • 1/4 c beef stock .
  • 1 tbsp dried Italian herb seasoning .
  • salt & pepper, to taste .
  • 1/4 c water .
  • 1 small onion, finely sliced .
  • 250 g ground lean pork .
  • 2 tbsps vinegar .
  • 1 egg .
  • 1/4 c brown sugar, packed .
  • 1 tbsp curry powder .
  • 1 tsp minced garlic .
  • Sauce .
  • 1/2 c breadcrumbs

Directions
  • Step #1 Preheat Oven at 375F Combine all Meatloaf ingredients in large bowl mixing well.
  • Step #2 Shape meatloaf onto lightly greased baking tray into a free form log shape.
  • Step #3 Bake for 45 Minutes.
  • Step #4 Lightly sauté onion in margarine until translucent.
  • Step #5 Add all other sauce ingredients & bring slowly to the boil.
  • Step #6 Reduce heat to low & let simmer for 15 mins.
  • Step #7 Once Meatloaf has been cooking for 45 mins reduce oven to 350°F Baste meatloaf with half of BBQ Sauce & cook for further 45 mins basting with remaining sauce often.
  • Step #8 Rest for 10 mins loosely covered with foil wrap before slicing Meatloaf thickly & serving with mashed potato & any remaining sauce.
