Garlic Coconut Mashed Yams (sweet Potatoes) Recipe

Ingredients
  • 1/4 tsp white pepper .
  • 4 garlic cloves, minced .
  • 1/4 tsp allspice .
  • 1 tsp olive oil .
  • 3 large garnet yams, peeled .
  • 1 tsp dried thyme .
  • 1/2 c coconut milk (full-fat, no sugar added) .
  • 1 tsp sea salt

Directions
  • Step #1 Heat oil in small saute pan over med-heat/flame.
  • Step #2 Add the garlic & thyme & saute until the garlic is golden.
  • Step #3 Remove from heat.
  • Step #4 Slice the yams into 2-inch cubes.
  • Step #5 Bring 2 quarts of water to a boil.
  • Step #6 Add the yams & boil for 15 mins or until the yams are soft.
  • Step #7 Drain in a strainer & then return to pot.
  • Step #8 Add sauteed garlic & remaining ingredients.
  • Step #9 Mash until creamy, using a potato masher.
  • Step #10 Serve hot.
