Black-eyed Pea Salad Recipe

Ingredients

1/4 tsp ground black pepper .
2 tbsps water .
1 small red onion, sliced into thin rings .
1/3 c salad oil .
8 c mixed salad greens, torn .
1 tbsp sugar .
1 garlic clove, minced .
4 c black-eyed peas, cooked or 2 (15 oz) cans black-eyed peas, rinsed & drained .
1/2 tsp dried rosemary, crumbled .
1/4 tsp salt .
1/3 c vinegar

Directions

Step #1 In a storage bowl with a lid, stir this together the black-eyed peas & the onion rings.
Step #2 In a separate bowl, vinegar, garlic, sugar, water, rosemary, whisk together the oil, salt & pepper.
Step #3 Pour the vinegar mixture over the black-eyed peas & onions; toss to coat.
Step #4 Cover up & chill 2 to 24 hrs.
Step #5 To serve, line 12 salad plates with the mixed salad greens.
Step #6 Divide the black-eyed peas, onions & dressing equally between the 12 plates.
Step #7 Great with Greens Stuffed Ham & a potato side dish.
