Black-eyed Pea Salad Recipe

Ingredients
  • 1/4 tsp ground black pepper .
  • 2 tbsps water .
  • 1 small red onion, sliced into thin rings .
  • 1/3 c salad oil .
  • 8 c mixed salad greens, torn .
  • 1 tbsp sugar .
  • 1 garlic clove, minced .
  • 4 c black-eyed peas, cooked or 2 (15 oz) cans black-eyed peas, rinsed & drained .
  • 1/2 tsp dried rosemary, crumbled .
  • 1/4 tsp salt .
  • 1/3 c vinegar

Directions
  • Step #1 In a storage bowl with a lid, stir this together the black-eyed peas & the onion rings.
  • Step #2 In a separate bowl, vinegar, garlic, sugar, water, rosemary, whisk together the oil, salt & pepper.
  • Step #3 Pour the vinegar mixture over the black-eyed peas & onions; toss to coat.
  • Step #4 Cover up & chill 2 to 24 hrs.
  • Step #5 To serve, line 12 salad plates with the mixed salad greens.
  • Step #6 Divide the black-eyed peas, onions & dressing equally between the 12 plates.
  • Step #7 Great with Greens Stuffed Ham & a potato side dish.
