Grilled Chicken With Whole Wheat Penne And Veggies Recipe

Ingredients
  • 1/2 c vegetable broth .
  • 1 1/2 c whole wheat penne .
  • 1 tbsp olive oil .
  • 2 tbsps herbes de provence .
  • 1/2 small onion .
  • 2 tbsps crushed red pepper flakes .
  • 2 c broccoli florets .
  • 2 tbsps dried basil .
  • 2 red bell peppers, cut into medium strips .
  • 2 tbsps pine nuts, toasted .
  • 2 boneless skinless chicken breasts .
  • 2 tbsps dried marjoram .
  • 1 c white wine .
  • 1 tbsp butter .
  • 4 garlic cloves, minced .
  • 2 tbsps parmesan cheese

Directions
  • Step #1 Pound chicken to a thickness of 1/2 an inch.
  • Step #2 Combine 2 cloves garlic, 1 T crushed red pepper, & 2 T Herbes de Provence in a small bowl.
  • Step #3 Rub garlic mixture into both sides of each chicken breast.
  • Step #4 Spice up both sides of each breast with salt & pepper.
  • Step #5 Cover up chicken & leave in the fridge for at least an hr.
  • Step #6 Steam or boil broccoli for 2 mins & then remove this from heat.
  • Step #7 Grill chicken over med-high heat, about 4 mins per side.
  • Step #8 Place chicken on a plate, cover with aluminum foil wrap, & set aside.
  • Step #9 Cook pasta according to package directions.
  • Step #10 While pasta boils, cook remaining garlic & onion over med-heat/flame until softened.
  • Step #11 Add wine, marjoram, broth, basil, & the remaining crushed pepper.
  • Step #12 Bring to a boil & let simmer until reduced.
  • Step #13 Add red pepper & cook for a min or two.
  • Step #14 Add broccoli & cook this until re-heated.
  • Step #15 Drain pasta & add to veggie mixture.
  • Step #16 Divide pasta between 2 plates.
  • Step #17 Top with chicken, pine nuts, & parmesan cheese.
