Sesame Noodles With Broccoli Recipe

Ingredients
  • Sauce .
  • 3/4 c green onions, thinly sliced .
  • 2 garlic cloves, minced .
  • 1 1/2 tbsps dark sesame oil .
  • 2 tbsps rice wine vinegar .
  • Noodles .
  • 2 tbsps tahini .
  • 1/3 c fresh cilantro, sliced .
  • 1/4 tsp salt .
  • 1/2 tsp salt .
  • 1/2 tsp chili paste with garlic (sambal oelek) .
  • 2 tsps honey .
  • 3 tbsps sesame seeds, toasted .
  • 2 tbsps low sodium soy sauce .
  • 2 c carrots, shredded .
  • 8 oz whole wheat spaghetti .
  • 2 tbsps water .
  • 5 c broccoli florets .
  • 1/2 tsp fresh ginger, peeled & grated

Directions
  • Step #1 To prepare sauce, mix tahini & next 9 ingredients (through garlic) in a small bowl; stir with a whisk.
  • Step #2 To prepare noodles, cook pasta In a large-ish pot of boiling water 5 mins, omitting salt & fat.
  • Step #3 Add broccoli to pot & cook 1 min.
  • Step #4 Add carrots to pot; cook 1 min.
  • Step #5 Drain pasta, broccoli & carrots; place this In a large-ish bowl.
  • Step #6 Sprinkle top with onions & remaining "noodle" ingredients.
  • Step #7 Drizzle with sauce & toss well.
