Nacho Macaroni And Cheese Recipe

Ingredients
  • 3/4 c heavy whipping cream .
  • 1 c large corn chips (or salted tortilla chips like Doritos) .
  • 1 c whole milk .
  • 1/2 c bottled thick & chunky salsa verde (medium heat) .
  • 1/4 tsp ground cloves .
  • 4 tsps all-purpose flour .
  • 1 c packed fresh cilantro leaves .
  • 3 c packed coarse grated sharp cheddar cheese (about 12 oz.) .
  • 2 c small elbow macaroni

Directions
  • Step #1 Preheat oven to 425F degrees.
  • Step #2 Cook macaroni according to package instructions to al dente.
  • Step #3 Drain.
  • Step #4 Meanwhile, mix salsa & cilantro in food processor/blender.
  • Step #5 Toss 2 c of cheese & flour in medium bowl to coat.
  • Step #6 Bring milk, cream, & cloves to simmer in large saucepan over medium-high heat.
  • Step #7 Add cheese mixture.
  • Step #8 Whisk until sauce is smooth, about 1 min.
  • Step #9 Mix in macaroni; season this with pepper.
  • Step #10 Spread half of mixture in 11X7" baking dish.
  • Step #11 Drop half of salsa over in dollops.
  • Step #12 Sprinkle top with 1/2 c cheese.
  • Step #13 Top with remaining macaroni mixture & salsa mixture.
  • Step #14 Sprinkle top corn chips over top.
  • Step #15 Top with 1/2 c cheese.
  • Step #16 Bake until heated through & bubbly, about 10-15 mins.
