Step #1 In a small bowl soften & proof the yeast in the warm water.
Step #2 In a saucepan mix the milk, sugar, butter, & salt; cool to lukewarm.
Step #3 Add 3 c flour & mix well.
Step #4 Stir in the yeast & eggs; beat well.
Step #5 Add enough of the remaining flour to make a soft dough.
Step #6 Turn out on lightly floured surface & knead 100 times.
Step #7 Place in lightly grease bowl; cover with cloth or plastic wrap & let rise till double (about 1 1/2 to 2 hrs).
Step #8 Punch down & divide dough in half; cover & let rest for 10 mins.
Step #9 Roll each half into a 15x7 rectangle, about 1/2" thick.
Step #10 Mix the sugar & cinnamon for the filling together.
Step #11 Spread each rectangle with soft butter & then sprinkle the filling on each.
Step #12 Sprinkle top 1 tsp of water over each & spread with spatula.
Step #13 Roll up as for a jelly roll beginning with narrow side; seal the long edge.
Step #14 Place sealed side down in two greased pans.
Step #15 Rise till almost double (45-60 mins).
Step #16 Bake in a 375 degree oven for 35-40 mins or till done.
Step #17 If it browns too much, cover with foil wrap the last 15 mins or so.
Step #18 NOTE: If you want an Orange bread substitute the following--1 1/4 c milk & 3/4 c orange juice for the 2 c milk; & add 1 tbsp grated orange rind.
