Touchdown Tortas With Chipotle Mayonnaise Recipe

Ingredients
  • 1 tbsp chipotle chiles in adobo, finely sliced .
  • 3/4 c low-fat mayonnaise .
  • 2 c cooked chicken or cooked pork, shredded cooked .
  • 1 large sweet onion, halved & thinly sliced .
  • 1 1/2 tsps fresh lime juice .
  • 1 tbsp fresh cilantro, sliced .
  • 1 1/2 c refried beans, warm .
  • 1 1/2 c lettuce, shredded .
  • 6 sandwich buns, bolillos

Directions
  • Step #1 To make the chipotle mayonnaise, mix the mayonnaise, chipotles, cilantro, & lime juice until well mixed.
  • Step #2 Cut rolls in half lengthwise.
  • Step #3 Pull out some of the soft white centers to make space for filling.
  • Step #4 Spread about 2 tbsps refried beans on the bottom half of each.
  • Step #5 Top with 1/3 c shredded chicken.
  • Step #6 Spoon 2 tbsps chipotle mayonnaise over chicken.
  • Step #7 Top with 1/6 of the Oso Sweet Onion slices & 1/4 c lettuce.
  • Step #8 Cover up with top halves of rolls & serve at once.
