Shepherd's Pie With Garlic Mashed Potatoes Recipe

Ingredients
  • 1 1/2 c chili sauce (or tomato sauce, ketchup or pureed canned tomatoes) .
  • 2 garlic, finely sliced .
  • 2 onions, sliced .
  • 1 c fresh whole wheat breadcrumbs .
  • 2 c chickpeas, sliced .
  • 1/2 c corn (fresh or frozen) .
  • 1/4 tsp hot red pepper sauce .
  • salt & pepper .
  • 2 lbs baking potatoes, peeled & cut into cubes .
  • 1 tbsp paprika .
  • 1 lb ground beef .
  • 1 tbsp worcestershire sauce .
  • 12 garlic cloves, peeled .
  • 1/2 c peas (fresh or frozen)

Directions
  • Step #1 Combine potatoes & whole garlic cloves in pot & cover with water.
  • Step #2 Bring to a boil & cook for 20 mins or until tender.
  • Step #3 Drain well, saving about 1 c cooking liquid.
  • Step #4 With potato masher, mash potatoes with 1/2 c cooking liquid.
  • Step #5 Add salt & pepper to taste.
  • Step #6 Add extra liquid if necessary.
  • Step #7 Meanwhile, heat a large skillet.
  • Step #8 Add beef & brown.
  • Step #9 Add onions & sliced garlic & cook this until tender.
  • Step #10 Drain off any fat if necessary.
  • Step #11 Add chickpeas & chili sauce.
  • Step #12 Bring to boil.
  • Step #13 Reduce heat & cook carefully for about 10 mins.
  • Step #14 Add Worcestershire, hot pepper sauce, breadcrumbs, peas, corn & mix well.
  • Step #15 Spice up to taste with salt & pepper.
  • Step #16 Transfer mixture to lightly oiled 10 x 8" casserole.
  • Step #17 Spread mashed potatoes on top.
  • Step #18 Dust with paprika.
  • Step #19 Bake in preheated oven 400F for 30 mins.
