Ingredients
  • 1-2 medium onion .
  • 2-3 tbsps butter (a must) .
  • 2 1/4 lbs potatoes, boiled in their jackets the day before (1kg) .
  • salt

Directions
  • Step #1 Peel the cooked potatoes & grate them through a coarse grater.
  • Step #2 Slice the onions into thin wedges.
  • Step #3 Melt the butter in a non-stick frying pan & add the onions & sweat them until they look glassy & transparent.
  • Step #4 Add the grated potatoes & the salt & stir through.
  • Step #5 Fry while stirring them around in the pan for about 3 to 5 mins.
  • Step #6 Press together to form a flat cake & fry over med-heat/flame until there is a golden crust on the bottom.
  • Step #7 Place a serving platter on the pan & turn the pan upside down, so the Roesti falls on the platter with the crust on top.
  • Step #8 Serve as soon as possible.
