Cranberry Pignoli Nut Bread Recipe

Ingredients
  • 1 tsp salt
  • 2 c bread flour
  • 1 egg
  • 2 tbsps brown sugar
  • 2 tbsps butter, softened
  • 1 1/4 c warm water (110 degrees F/45 degrees C)
  • 2 c dried cranberries
  • 1/2 c rolled oats
  • 1/2 c wheat germ
  • 3 tsps active dry yeast
  • 1/2 c pine nuts/pignoli

Directions
  • Step #1 In a small bowl, dissolve yeast in warm water.
  • Step #2 Let stand until creamy, about 10 mins.
  • Step #3 In a large bowl, egg, oats, mix the yeast mixture with the flour, wheat germ, brown sugar, butter & salt; stir well to mix.
  • Step #4 When the dough has pulled together, turn it out onto a lightly floured surface & knead until smooth & supple, about 8 mins.
  • Step #5 Lightly oil a large bowl, place the dough in the bowl & turn to coat with oil.
  • Step #6 Cover with a damp cloth & let rise in a warm place until doubled in volume, about 1 hr.
  • Step #7 Deflate the dough, turn it out onto a lightly floured surface & knead in the cranberries & pine nuts.
  • Step #8 Divide the dough into two equal pieces & form into loaves.
  • Step #9 Place the loaves into two lightly greased 9x5 inch loaf pans.
  • Step #10 Cover the loaves with a damp cloth & let rise until doubled in volume, about 30 mins.
  • Step #11 Meanwhile, preheat your trusty oven to 375 degrees F (190 degrees C).
  • Step #12 Bake in preheated oven for 45 to 55 mins, or until loaf sounds hollow when tapped on the bottom.
