Kulfi Recipe

Ingredients
  • 4 tbsps sliced pistachios .
  • 2/3 c sugar .
  • 10 c milk (6%) .
  • 2 tbsps rice flour .
  • 1 tbsp rose water .
  • 1 tsp sliced cardamom seeds

Directions
  • Step #1 Mix the rice flour with 4 tbsps of milk in a bowl.
  • Step #2 Bring the rest of the milk to a boil & leave it on low heat simmering for 45 mins, stirring periodically (don't let it burn).
  • Step #3 Pour the rice flour mixture into the milk.
  • Step #4 Add the pistachios & sugar.
  • Step #5 Boil for another 10 mins & remove this from heat.
  • Step #6 Add the rose water & cardamom.
  • Step #7 Leave it til it reaches room temperature, then pour the kulfi into a container & put into freezer.
  • Step #8 Stir every 20-30 mins to break up the forming crystals.
  • Step #9 When the ice-cream begins to thicken, leave it until it completely freezes.
