Ingredients
4 tbsps sliced pistachios .
2/3 c sugar .
10 c milk (6%) .
2 tbsps rice flour .
1 tbsp rose water .
1 tsp sliced cardamom seeds
Directions
Step #1 Mix the rice flour with 4 tbsps of milk in a bowl.
Step #2 Bring the rest of the milk to a boil & leave it on low heat simmering for 45 mins, stirring periodically (don't let it burn).
Step #3 Pour the rice flour mixture into the milk.
Step #4 Add the pistachios & sugar.
Step #5 Boil for another 10 mins & remove this from heat.
Step #6 Add the rose water & cardamom.
Step #7 Leave it til it reaches room temperature, then pour the kulfi into a container & put into freezer.
Step #8 Stir every 20-30 mins to break up the forming crystals.
Step #9 When the ice-cream begins to thicken, leave it until it completely freezes.
