Potato Salad Recipe

Ingredients
  • 1/2 tsp pepper .
  • 6 hard-boiled eggs, yolks set aside & whites sliced .
  • 1/2 tsp salt .
  • 2 lbs red potatoes .
  • 2 tsps yellow mustard .
  • 4 stalks celery, sliced .
  • 1 tbsp red wine vinegar .
  • 1 bunch green onions, sliced .
  • 1/2 c sour cream .
  • 1 tsp dried dill .
  • 3/4 c mayonnaise .
  • 1/4 tsp garlic powder .
  • 1/2 tsp onion powder

Directions
  • Step #1 Wash potatoes & cut in large dice - however large you want the final potato chunks to be.
  • Step #2 Cook in boiling, salted water for 5 mins or until tender.
  • Step #3 Drain well.
  • Step #4 While still warm, sprinkle red wine vinegar evenly over drained potatoes, & mix well.
  • Step #5 The potatoes will soak up the vinegar.
  • Step #6 In a mixer, sour cream, yolks from hard-boiled eggs, onion powder, mustard, HALF the green onions, garlic powder, mix mayonnaise, salt & pepper.
  • Step #7 Blend until smooth.
  • Step #8 In a large bowl, remaining green onions, mix potatoes, celery, dressing from mixer, hard-boiled egg whites, & dill.
  • Step #9 Mix well & taste to check seasonings.
  • Step #10 Chill well in fridge.
