6 hard-boiled eggs, yolks set aside & whites sliced .
1/2 tsp salt .
2 lbs red potatoes .
2 tsps yellow mustard .
4 stalks celery, sliced .
1 tbsp red wine vinegar .
1 bunch green onions, sliced .
1/2 c sour cream .
1 tsp dried dill .
3/4 c mayonnaise .
1/4 tsp garlic powder .
1/2 tsp onion powder
Directions
Step #1 Wash potatoes & cut in large dice - however large you want the final potato chunks to be.
Step #2 Cook in boiling, salted water for 5 mins or until tender.
Step #3 Drain well.
Step #4 While still warm, sprinkle red wine vinegar evenly over drained potatoes, & mix well.
Step #5 The potatoes will soak up the vinegar.
Step #6 In a mixer, sour cream, yolks from hard-boiled eggs, onion powder, mustard, HALF the green onions, garlic powder, mix mayonnaise, salt & pepper.
Step #7 Blend until smooth.
Step #8 In a large bowl, remaining green onions, mix potatoes, celery, dressing from mixer, hard-boiled egg whites, & dill.
