Chilli Vegetable Noodles Recipe

Ingredients
  • 1/2 red chili, finely sliced .
  • 1 tsp sweet soy sauce .
  • 1/2 tsp Chinese five spice powder .
  • 220 g tinned water chestnuts, in water, drained .
  • 225 g tinned bamboo shoots, in water, drained .
  • 1 red pepper, deseeded & finely sliced .
  • cooking spray, for frying .
  • 1 spring onion, finely sliced .
  • 500 g medium egg noodles .
  • 200 g pak choi, broken into leaves .
  • 100 g shiitake mushrooms .
  • 2 tsps toasted sesame seeds .
  • 2 tbsps sweet chili sauce

Directions
  • Step #1 Bring a pan of water to the boil & heat a non-stick wok until hot.
  • Step #2 Mix together the sesame seeds, Chinese 5 spice, red chilli, spring onions, soy sauce & sweet chilli sauce.
  • Step #3 Set aside.
  • Step #4 Plunge noodles into boiling water & cook this until tender, according to packet instructions.
  • Step #5 Drain.
  • Step #6 Spray the wok with oil & when hot, stir-fry all the vegetables for 3-5 mins until tender.
  • Step #7 Toss through the dressing & serve this with the noodles.
