Cream Of Quinoa Mushroom Soup Recipe

Ingredients
  • 1 c cooked quinoa .
  • 2 tbsps minced shallots .
  • 8 oz mushrooms, wiped clean & finely sliced .
  • 1/2 c fat-free evaporated milk .
  • veggie nonstick cooking spray .
  • 1/4 c sliced fresh dill .
  • salt & freshly ground black pepper .
  • 3 c fat-free vegetable broth

Directions
  • Step #1 Heat a medium saucepan, sprayed with cooking spray.
  • Step #2 Cook the shallots until tender.
  • Step #3 Add the mushrooms, cover & cook for 5 mins or until tender.
  • Step #4 (If the mushrooms begin to stick to the bottom of the pan, then add some broth.
  • Step #5 ) Add the quinoa & broth & bring the liquid to a simmer.
  • Step #6 Spice up to taste with salt & pepper & stir in the non-fat evaporated milk (or milk substitute).
  • Step #7 Bring back up to a simmer, remove this from heat & stir in the the dill.
