Ingredients
  • 2 medium garlic cloves, minced .
  • 16 oz frozen sliced spinach, thawed & well-drained .
  • 1 large egg white .
  • 2 tbsps soyakaas grated vegan parmesan cheese .
  • 1/8 tsp ground nutmeg .
  • 14 oz canned tomato sauce .
  • 14 oz canned sliced tomatoes with basil oregano & garlic .
  • 8 oz uncooked whole wheat lasagna noodles (9 noodles) .
  • 1/2 c onions, sliced .
  • cooking spray (1 spray) .
  • 2 c button mushrooms or cremini mushrooms, sliced .
  • 15 oz fat-free ricotta cheese .
  • 1 c shredded fat free mozzarella cheese

Directions
  • Step #1 * Preheat oven to 350ºF.
  • Step #2 * Coat a large nonstick skillet with cooking spray & set pan over medium-high heat.
  • Step #3 Add onion, mushrooms & garlic; sauté until mushroom liquid cooks off, about 5 to 7 mins.
  • Step #4 Add spinach; cook this until liquid evaporates, about 2 mins more.
  • Step #5 Remove skillet from heat & transfer mixture to a large bowl.
  • Step #6 Add ricotta, mozzarella, egg white & nutmeg; mix well to mix.
  • Step #7 * Mix together tomato sauce & sliced tomatoes in another bowl.
  • Step #8 Spoon 3/4 c of tomato mixture into bottom of an 11 X 7-inch baking dish.
  • Step #9 Top with 3 uncooked lasagna noodles.
  • Step #10 Top with 3/4 c more of tomato mixture & 1/2 of cheese mixture; spread cheese mixture to make an even layer.
  • Step #11 Top with 3 more noodles & press noodles slightly into cheese mixture.
  • Step #12 Top noodles with 3/4 c more of tomato mixture & remaining cheese mixture.
  • Step #13 Top with remaining 3 noodles, pressing noodles slightly into cheese mixture.
  • Step #14 Top with remaining tomato mixture.
  • Step #15 Sprinkle top with grated cheese topping.
  • Step #16 * Bake until lasagna filling is bubbly & top is golden, about 40 mins.
  • Step #17 Let stand 10 mins before slicing into 6 pieces.
