Classic Red Beans N Rice Recipe

Ingredients
  • 1 lb dry kidney beans
  • 1 large onion, sliced
  • 2 quarts water
  • 1 lb ground beef
  • Hot cooked rice
  • 1 garlic clove, minced
  • 2 bay leaves
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 ham hock
  • 1/2 tsp pepper

Directions
  • Step #1 Place beans in a large saucepan; add water to cover by 2 in.
  • Step #2 Bring to a boil; boil for 2 mins.
  • Step #3 Remove from the heat; cover & let this stand for 1 hr.
  • Step #4 Drain & discard liquid.
  • Step #5 Add 2 qts.
  • Step #6 water, ham hock, bay leaves & onion powder to the beans.
  • Step #7 Bring to a boil.
  • Step #8 Reduce heat; cover & let simmer for 1 hr.
  • Step #9 In a skillet, onion, cook beef, garlic, salt & pepper over med-heat/flame until meat is no longer pink; drain.
  • Step #10 Add to bean mixture.
  • Step #11 Simmer, uncovered, for 1 hr.
  • Step #12 Discard bay leaves.
  • Step #13 Remove ham hock.
  • Step #14 Remove ham from bones; cut into bite-size pieces & return to broth.
  • Step #15 Serve over rice.
