Dan's Jambalaya Recipe

Ingredients

4 c cooked rice (2 c. rice cooked in 4 c. chicken stock) .
1/2 c bell peppers, sliced .
2 tsps salt .
1 tbsp tony's creole seasoning .
1/4 c oil .
2 large onions, sliced .
1 (14 1/2 oz) can sliced tomatoes & green chilies, such as Ro-Tel .
1 tsp salt .
3 garlic cloves, sliced .
8 oz tomato sauce .
1/2 lb shrimp .
8 skinless chicken thighs .
2 large celery ribs, sliced .
2 tbsps parsley, sliced .
2 tbsps green onion tops, sliced .
1 lb andouille sausages or chorizo sausage, cut into 1/4-inch slices, I used Chorizo

Directions

Step #1 Heat oil in a lg.
Step #2 , thick pot on med-high heat.
Step #3 Add chicken thighs, brown on all sides & cook about 10-15 mins.
Step #4 Add sausage, half the Tony's seasoning, & salt.
Step #5 Cover up, & cook this until chicken is well-done, lower heat, about 15 mins.
Step #6 Remove chicken & sausage, & drain all except 1/3 of the drippings from the pot.
Step #7 Add onions, & garlic, bell pepper, celery, & saute until tender.
Step #8 Stir in tomato with chili's, & salt, the rest of the Tony's seasoning, & return chicken (de-boned), tomato sauce, & sausage to the pot.
Step #9 Cover up, & let simmer about 10 mins.
Step #10 Add shrimp, parsley ,and green onion tops, cooking an extra 5 mins.
Step #11 , covered.
Step #12 Fold in cooked rice, & let simmer about 10 mins.
