Apricot-orange Salad With Sour Cream/cream Cheese Topping Recipe

Ingredients
  • 1/2 c carrots, curls .
  • 1 tbsp cinnamon .
  • 8 oz dried apricots, sliced .
  • 1 tbsp dry coconut powder .
  • 1 (8 oz) container sour cream .
  • 1/4 c dried cranberries (Craisins) .
  • 1/2 c sugar .
  • 1 7/8 c water .
  • 1 (16 oz) can mandarin oranges, with juice .
  • Topping .
  • 1/2 c cold water .
  • 1 (8 oz) package cream cheese .
  • 1 (6 oz) box orange flavor gelatin (I prefer Jello) .
  • 1/8 c Grand Marnier .
  • 2 oranges, juice of

Directions
  • Step #1 Bring the water & grand marnier to a boil & pour over the gelatin In a large-ish bowl.
  • Step #2 Stir till gelatin disolves.
  • Step #3 Add the dried apricots & cranberries & let sit & cool for about 5-10 mins.
  • Step #4 Using a potato peeler, make thin strips using one or two carrots so that you have 1/2 c of carrot curls.
  • Step #5 Add the can of mandarin oranges with juice, the carrot strips, juice of two oranges & 1/2 C cold water.
  • Step #6 Stir, let set in a bowl or mold of choice in the refrigerator.
  • Step #7 Blend the topping ingredients well.
  • Step #8 After jello has set, spread on top.
