5 large russet potatoes .
1/2 tsp paprika .
1/8 tsp cayenne pepper .
2 tbsps parmesan cheese, freshly grated .
1/4 tsp salt
Directions
Step #1 Preheat oven to 400°F Scrub the potatoes.
Step #2 With a paring knife, remove skin & about 1/8 inch of the flesh in long 1- to 2-inch-wide strips (Reserve peeled potatoes for another use.
Step #3 ) Toss potato skins with oil, paprika, salt & cayenne.
Step #4 Place in a single layer on a lightly oiled baking sheet; sprinkle with Parmesan.
Step #5 Bake until tender & golden, about 25 to 30 mins.
Step #6 Serves 4.
