Shape's Vietnamese Shrimp Salad Recipe

Ingredients
  • 2 tbsps granulated sugar .
  • 1 lime, juice of .
  • 1 tbsp fish sauce or soy sauce .
  • 4 small carrots, peeled & grated (about 4 c) .
  • 10 c fresh torn spinach leaves, rinsed & patted dry .
  • 1 lb cold cooked shrimp, peeled .
  • 1/3 c sliced dry roasted peanuts

Directions
  • Step #1 For dressing, whisk together lime juice, sugar & fish sauce in a small bowl until sugar dissolves.
  • Step #2 Place spinach & carrots In a large-ish salad bowl.
  • Step #3 Add half of dressing & toss to mix.
  • Step #4 Portion salad onto 4 dinner plates.
  • Step #5 Top with peanuts & shrimp.
  • Step #6 Drizzle remaining dressing over salads.
  • Step #7 Note: Round out the meal with sesame rice cakes & a dessert of honeydew melon balls tossed with maple syrup & sliced candied ginger.
