Cranberry Wheat-free Muffins Recipe

Ingredients
  • 1 1/2 c cranberries (fresh or frozen) .
  • 1/2 c honey .
  • 1/4 tsp salt .
  • 3 c almond flour (ground blanched almonds, also known as almond meal) .
  • 3 eggs .
  • 1/2 tsp vanilla extract .
  • 1/2 tsp baking soda .
  • 1 tsp cinnamon

Directions
  • Step #1 Preheat oven to 325F degrees F.
  • Step #2 Line muffin tin with large baking c.
  • Step #3 Combine the almond flour, baking soda, salt & cinnamon in a bowl.
  • Step #4 Combine vanilla, in another bowl, honey & eggs, then stir cranberries into this mixture.
  • Step #5 Add the dry ingredients to the wet & mix well.
  • Step #6 Evenly fill each baking cut with the batter.
  • Step #7 Bake for 18 to 20 mins (may have to cook extra 10 mins until toothpick inserted into muffin comes out clean.
