Smoked Haddock Rosti Starter Recipe

Ingredients
  • 1 tbsp olive oil .
  • 2-3 garlic cloves, crushed .
  • 1/2 lemon, rind of, finely grated .
  • salt & pepper .
  • 2 tbsps creme fraiche .
  • 1 lb potatoes, peeled & coarsely grated .
  • 1 lb smoked haddock, skinned & tiny bones removed .
  • 1 tbsp fresh parsley, sliced .
  • 1 large onion, peeled & coarsely grated

Directions
  • Step #1 Rinse onion in cold water, dry in a dish towel.
  • Step #2 Dry Potatoes in a dish towel.
  • Step #3 Mix onion, garlic & potatoes.
  • Step #4 Slice Haddock.
  • Step #5 Heat oil, press down, add 1/2 of potato mixture, season.
  • Step #6 Add a layer of fish.
  • Step #7 Sprinkle top with lemon, parsley & pepper.
  • Step #8 Top with remaining potatoes, press down firmly.
  • Step #9 Cover up with tin foil wrap & cook ovr lowest heat for 25-30 mins.
  • Step #10 Pre heat Grill 2-3 mins before the end of cooking time.
  • Step #11 Remove tin foil wrap & brown under the grill.
  • Step #12 Serve on a warmed dish with Salad, Creme Fraiche & Lemon Wedges.
