Creamy Spinach Potatoes Recipe

Ingredients
  • water, to cook potato .
  • 1/2 tsp salt .
  • 1 tbsp grated parmesan cheese .
  • 1 (10 oz) box frozen sliced spinach, thawed & squeezed dry .
  • 1/4 c all-purpose flour .
  • 2 tbsps margarine (or butter) .
  • 2 c milk .
  • 1 1/2 lbs peeled potatoes, cut up (about 3 medium) .
  • 1/4 tsp garlic powder (optional) .
  • 1/8 tsp pepper .
  • 1/2 tsp onion salt

Directions
  • Step #1 Cook poatato in water in med.
  • Step #2 saucepan until tender.
  • Step #3 Drain.
  • Step #4 Coarsely mash.
  • Step #5 Melt margerine in med.
  • Step #6 saucepan.
  • Step #7 Stir in flour until smooth.
  • Step #8 Slowly whisk in milk.
  • Step #9 Add next 4 ingredients.
  • Step #10 Heat & stir until boiling & thickened.
  • Step #11 Stir in spinach.
  • Step #12 Turn potato into greased 2 quart (2 L) baking dish.
  • Step #13 Pour sauce on top.
  • Step #14 Poke randomly with spoon to allow some sauce down into potato.
  • Step #15 Sprinkle top with parmesian cheese.
  • Step #16 Bake in 350 degree F (175 degree C) oven for 30 mins until hot.
  • Step #17 Serves 6.
