Bourbon-glazed Pork Chops And Peaches Recipe

Ingredients
  • 1/3 c bourbon .
  • 4 (4 oz) boneless center cut pork chops (about 3/4-inch thick) .
  • 2 peaches, halved & pitted .
  • 1 tbsp vegetable oil .
  • 3 tbsps low sodium soy sauce .
  • 1/2 tsp ground ginger .
  • 1/4 tsp black pepper .
  • 1/4 tsp crushed red pepper flakes .
  • 1/4 c honey

Directions
  • Step #1 Combine the first 7 ingredients In a large-ish bowl; add pork chops & peaches; toss well to coat.
  • Step #2 Heat a nonstick grill pan coated with cooking spray over med-high heat.
  • Step #3 Remove pork & peaches from bowl, reserving marinade.
  • Step #4 Place pork & peaches on grill pan; cook 4 mins on each side or until pork is done.
  • Step #5 While pork cooks, place marinade in a microwave-safe bowl; microwave on HIGH for 2 mins (make sure the marinade comes to a full boil).
  • Step #6 Spoon over pork & peaches.
