Ww 5 Points South-of-france Potato Salad Recipe

Ingredients
  • 1 c grape tomatoes, halved .
  • 1 tbsp Dijon mustard .
  • 1/4 tsp salt .
  • 1/4 tsp pepper .
  • 2 lbs uncooked small red potatoes, scrubbed & quartered .
  • 3/4 c red onions, sliced & quartered .
  • 5 tbsps olive oil .
  • 1 tbsp capers .
  • 1/4 c white wine vinegar .
  • 8 medium black olives, pitted & sliced .
  • 4 large eggs, hard boiled, peeled & cut into 8 wedges .
  • 8 oz green beans, cut into bite sized pieces .
  • 2 tbsps parsley, fresh & sliced

Directions
  • Step #1 Place potatoes In a large-ish saucepan, fill with enough water to over potatoes & bring to a boil over high heat.
  • Step #2 Reduce heat & let simmer until potatoes are tender when pierced with a fork, about 10 mins.
  • Step #3 When potatoes are cooked, remove with a slotted spoon & place this in medium sized serving bowl.
  • Step #4 Return water to a boil, add green beans & cook this until crisp tender, about 2 mins.
  • Step #5 Drain, rinse under cold water & drain again.
  • Step #6 In a small bowl, mustard, whisk together vinegar, water, salt & pepper until well mixed & then whisk in oil.
  • Step #7 Pour dressing over potatoes.
  • Step #8 Add green beans, onion, tomatoes, olives & capers.
  • Step #9 Toss to mix & coat.
  • Step #10 Add eggs & toss very carefully to mix.
  • Step #11 Sprinkle top with parsley.
  • Step #12 Yields & Points figured to 1 c per serving.
