Beef With Garlic, Ginger, Basil And Udon Noodles Recipe

Ingredients
  • 1 tbsp soy sauce .
  • 3 cm piece gingerroot .
  • 300F g porterhouse steaks .
  • 1/4 c cashew nuts .
  • 1 tsp chili oil .
  • 300F g udon noodles .
  • 1 onion .
  • 1 garlic clove .
  • 1 tbsp peanut oil .
  • 1 tbsp ketjap manis .
  • 1 c basil leaves .
  • 2 tbsps oyster sauce .
  • 1/2 red capsicum

Directions
  • Step #1 Slice the onion & capsicum & set aside.
  • Step #2 Finely slice the beef & place this In a large-ish bowl.
  • Step #3 Finely dice the ginger & garlic & add to the beef.
  • Step #4 Add the oyster sauce to the beef, ginger & garlic.
  • Step #5 Drizzle the chilli oil over the beef mixture & then mix it all together so that ginger & garlic can be seen to be mixed through.
  • Step #6 Cover up the beef mixture & place this in the refrigerator for a minimum of ten mins.
  • Step #7 Place the noodles in boiling water & prepare as per instructions (usually cook in boiling for 2 mins, then drain).
  • Step #8 While the noodles are cooking, heat the peanut oil in a wok.
  • Step #9 When the there is a slight haze coming from the oil, add the onion & cook for about 1-2 mins until the onion has softened.
  • Step #10 Add the beef mixture & stir frequently over the heat.
  • Step #11 Add the soy sauce & kecap manis to the wok & stir through.
  • Step #12 Add the capsicum to the wok & toss through.
  • Step #13 Drain the noodles & set aside.
  • Step #14 Add the basil leaves & the cashews to the wok & stir for another 30 seconds,.
  • Step #15 Serve the noodles into bowls & top this with the beef mixture.
