Blackened Leg Of Lamb With Mint Sauce Recipe

Ingredients
  • 2-3 tbsps bottled mint sauce .
  • 1 tsp salt .
  • 1/3 c ketchup .
  • 3/4 c chili sauce .
  • 3-4 garlic cloves, slivered .
  • MINT SAUCE .
  • 6 lbs leg of lamb .
  • 1/2 c butter .
  • 1 tsp mustard .
  • 1 c water .
  • 1/3 c worcestershire sauce .
  • 1 dash pepper .
  • 1/3 c vinegar .
  • 1 c currant jelly

Directions
  • Step #1 With a sharp knife, cut small holes randamly in lamb.
  • Step #2 Insert garlic slivers into holes, leaving tops showing.
  • Step #3 Combine vinegar, mustard, worcestershire sauce,water,ketchup,salt & pepper.
  • Step #4 Marinate lamb in this mixture for at least 6 - 8 hrs.
  • Step #5 Bake uncovered in a 300F oven for 40 mins per lb.
  • Step #6 Baste every 30 mins.
  • Step #7 ( If you prefer lamb less done, reduce cooking time.
  • Step #8 ).
  • Step #9 The lamb will have a black crusty appearance, but will be tender & moist on the inside.
  • Step #10 Remove garlic slivers.
  • Step #11 Serve lamb with mint sauce.
  • Step #12 To make mint sauce, mix all ingredients & heat until melted.
