Step #1 Stir sugar, then boil quickly, butter, coffee, salt & cream of tarter over low heat/flame until sugar is dissolved, stirring constantly to the soft ball stage (when syrup can be gathered up in the fingers into a soft ball that will almost shape).
Step #2 Remove from heat & cool slightly.
Step #3 Add almond extract & beat until candy begins to harden.
Step #4 Add pecans & pour candy onto an oiled platter.
