Sour Cream Carrot Cake Recipe

Ingredients
  • 2 eggs, lightly beaten .
  • 1 1/2 c grated carrots (about 2 large carrots) .
  • 1 tsp ground nutmeg .
  • 30 g soft butter .
  • 60 g packaged cream cheese, softened .
  • 1 tsp grated lemon rind .
  • 1/2 c brown sugar .
  • 3/4 c self-raising flour .
  • 1 tsp ground cinnamon .
  • 6 walnut halves (or more) .
  • 1/2 tsp bicarbonate of soda .
  • Topping .
  • 1/2 c sour cream .
  • 1 1/2 c icing sugar .
  • Cream Cheese Frosting .
  • 1/2 c oil (i used vegtable) .
  • 1/2 c plain flour

Directions
  • Step #1 grease a 20cm ring pan, line base with paper; grease paper.
  • Step #2 sift flours, cinnamon & nutmeg into bowl, soda, stir in the sugar & carrot.
  • Step #3 mix oil, eggs & sour cream, stir in theto flour mixture.
  • Step #4 pour mixture into prepared pan, bake in moderatly slow oven for 50 mins (mine took 30 in the aga - so watch it closely).
  • Step #5 turn onto wire rack to cool.
  • Step #6 when cold, spread with frosting, decortae with walnut halves.
  • Step #7 Cream Cheese Frosting:.
  • Step #8 beat cream cheese, butter & lemon rind in small bowl with electric mixer until light & fluffy, slowly beat in sifted icing sugar; beat until mixd.
