Honey Cake Recipe

Ingredients
  • 1/2 tsp baking soda .
  • 1 c sliced walnuts .
  • 4 eggs .
  • 1 1/2 tsps baking powder .
  • 1 c honey .
  • 1/4 tsp ground cinnamon .
  • 1/2 c boiling water .
  • 1 c sugar .
  • 3 c all-purpose flour .
  • 2 tbsps brandy or any whiskey .
  • 1 tbsp instant coffee .
  • 1 grated washed orange, rind of .
  • 1/4 c vegetable oil or peanut oil

Directions
  • Step #1 Combine the flour, cinnamon, baking powder, & baking soda; set aside.
  • Step #2 Mix the instant coffee with the water; mix the oil, orange peel, honey, & brandy.
  • Step #3 In a large bowl, beat the eggs until frothy; slowly add the sugar & beat until light; add to the honey mixture.
  • Step #4 Combine the flour mixture alternately with the honey mixture, starting with flour & ending with flour.
  • Step #5 Stir in the walnuts.
  • Step #6 Pour the batter into an oiled & waxed paper-lined 13x9x2-inch baking pan.
  • Step #7 Bake in a 325F oven for about 50 mins.
  • Step #8 Test with a toothpick.
  • Step #9 If moist, continue baking until a toothpick inserted in the center comes out clean.
  • Step #10 Invert the cake onto a wire rack.
  • Step #11 Cool.
  • Step #12 Peel off the waxed paper & wrap in aluminum foil wrap to maintain freshness.
