Arborio Rice Soup Recipe

Ingredients
  • 3 garlic cloves, minced .
  • 1 tsp fresh rosemary, minced (1/2 tsp if dry, crushed) .
  • 2 1/2 c cremini mushrooms, sliced .
  • 1 stalk celery & leaves, finely sliced .
  • 4 c vegetable stock .
  • 1 tbsp olive oil .
  • 16 oz acorn squash, peeled, seeded & cut into 1/2 inch dice (about 2 c) .
  • 2 c onions, finely sliced .
  • 1 tsp lemon zest, thin strips .
  • 1/2 c arborio rice .
  • 2 tsps fresh lemon juice .
  • pecorino romano cheese, thinly sliced .
  • salt & pepper

Directions
  • Step #1 Heat oil in pot over meduim heat.
  • Step #2 Add onion, garlic, & celery.
  • Step #3 Cook, stirring every once in awhile, until onion is translucent, about 5 mins.
  • Step #4 Add mushrooms; continue cooking until mushrooms are tender, about 5 mins.
  • Step #5 Add rice & rosemary; stir until coated with oil.
  • Step #6 Add vegetable stock, squash, & lemon zest strips; increase heat to high & bring to a boil.
  • Step #7 Reduce heat; cover & let simmer, stirring every once in awhile, until rice & squash are tender, about twelve mins.
  • Step #8 Stir in lemon juice & season to taste.
  • Step #9 Serve topped with cheese.
  • Step #10 (No cheese for vegan version).
