3 Cheese Macaroni And Cheese
Ingredients
  • 1/4 tsp kosher salt .
  • 2 tbsps unsalted butter .
  • 1 1/2 tbsps butter .
  • TOPPING .
  • 1/2 c shallots, finely sliced .
  • 1 tbsp Dijon mustard .
  • 1/8 tsp nutmeg .
  • 1/4 tsp kosher salt .
  • 1 1/4 c dry white wine .
  • 7 oz gruyere, grated .
  • 8 oz cavatappi pasta or macaroni .
  • 4 oz sourdough bread, torn into large pieces .
  • 3 oz gouda cheese, grated .
  • 2/3 c half-and-half .
  • 2 tbsps all-purpose flour .
  • 1/8 tsp cayenne

Directions
  • Step #1 Boil pasta according to package directions.
  • Step #2 In frying pan, saute shallots in butter until light golden.
  • Step #3 Sprinkle top with flour- stirring til well mixed.
  • Step #4 Add wine & stir.
  • Step #5 Add cream & stir well.
  • Step #6 Add mustard, cayenne & nutmeg.
  • Step #7 Sprinkle top in cheese, one large handful at a time.
  • Step #8 Stir in cooked pasta & mix well.
  • Step #9 Pour into a 2-qt baking dish.
  • Step #10 TOPPING- in food processor/blender, put in all ingredients & pulse til well mixed.
  • Step #11 Sprinkle top on top of pasta.
  • Step #12 Bake at 400F degrees 20 mins- til topping is brown & cheese is bubbling.
