Season's Arroz Con Pollo Crock Pot Style Recipe

Ingredients
  • 1 1/2 c chicken broth .
  • 1 c carrots, sliced .
  • 1 c converted long grain rice (do not use instant rice) .
  • 1/2 tsp paprika .
  • 1 c frozen peas, defrosted .
  • 2 tsps salt .
  • salt & pepper .
  • 1 tsp dried oregano .
  • 2 bay leaves .
  • 2 garlic cloves, minced .
  • 1 (14 oz) can plum tomatoes, drained & sliced .
  • 1 large onion, sliced .
  • 1-2 c celery .
  • 2 tbsps boiling water .
  • 1 pinch saffron .
  • 8 boneless chicken thighs .
  • 1 tbsp vegetable oil .
  • 1 green bell pepper, seeded & sliced .
  • 1 tsp pepper

Directions
  • Step #1 In a small bowl mix the saffron & boiling water & set aside.
  • Step #2 In a large skillet, garlic, sauté the onion, pepper & rice in the vegetable oil.
  • Step #3 Spice up with bay leaves, paprika, oregano, salt & pepper.
  • Step #4 Add the plum tomatoes & place this in the bottom of the crock pot.
  • Step #5 Spice up the chicken thighs with salt & pepper.
  • Step #6 In the same skillet, sauté the chicken thighs until browned.
  • Step #7 Place the chicken thighs on top of the rice layer in the stoneware.
  • Step #8 Add the saffron & water, & the chicken broth.
  • Step #9 Cover up & cook on high for 1 hr, then reduce heat to low for 7-9 hrs.
  • Step #10 Thirty mins before the end of the cooking add the frozen peas, carrots & celery & mix contents thoroughly.
