Ingredients
1 1/2 c chicken broth .
1 c carrots, sliced .
1 c converted long grain rice (do not use instant rice) .
1/2 tsp paprika .
1 c frozen peas, defrosted .
2 tsps salt .
salt & pepper .
1 tsp dried oregano .
2 bay leaves .
2 garlic cloves, minced .
1 (14 oz) can plum tomatoes, drained & sliced .
1 large onion, sliced .
1-2 c celery .
2 tbsps boiling water .
1 pinch saffron .
8 boneless chicken thighs .
1 tbsp vegetable oil .
1 green bell pepper, seeded & sliced .
1 tsp pepper
Directions
Step #1 In a small bowl mix the saffron & boiling water & set aside.
Step #2 In a large skillet, garlic, sauté the onion, pepper & rice in the vegetable oil.
Step #3 Spice up with bay leaves, paprika, oregano, salt & pepper.
Step #4 Add the plum tomatoes & place this in the bottom of the crock pot.
Step #5 Spice up the chicken thighs with salt & pepper.
Step #6 In the same skillet, sauté the chicken thighs until browned.
Step #7 Place the chicken thighs on top of the rice layer in the stoneware.
Step #8 Add the saffron & water, & the chicken broth.
Step #9 Cover up & cook on high for 1 hr, then reduce heat to low for 7-9 hrs.
Step #10 Thirty mins before the end of the cooking add the frozen peas, carrots & celery & mix contents thoroughly.
