Tofu Kaleidoscope Recipe

Ingredients
  • 1 1/2 c soaked wheat or rye grain .
  • 1/4 c sliced fresh parsley .
  • 6 cherry tomatoes .
  • 3 c sliced young green beans .
  • 3 c shredded spinach .
  • 1 c sunflower seeds .
  • 1/3 c snipped fresh chives .
  • 2 oz crumbled blue cheese .
  • 1 1/2 lbs tofu .
  • 3 c shredded carrots

Directions
  • Step #1 Pat tofu dry with paper towels.
  • Step #2 Combine tofu & cheese & work with hands until coarsely mashed.
  • Step #3 Add wheat & seeds.
  • Step #4 Then add parsley & chives.
  • Step #5 Use hands to mix through lightly but thoroughly.
  • Step #6 Divid mix into 6 portions & place on dinner plates.
  • Step #7 Pat down to form neat circle about 1/4 inch thick.
  • Step #8 Start at edge & leave boarder 1/2 inch.
  • Step #9 Sprinkle top 1/2 c green beans in 1 inch strip around each patty.
  • Step #10 Follow with a circle of 1/2 c carrots next to the beans.
  • Step #11 Then the spinach.
  • Step #12 Place tomato in center.
  • Step #13 Serve with favorite dressing.
