Asian Carrot Noodle Salad Recipe

Ingredients
  • 1 tbsp hot water .
  • 2 oz long thin noodles (about 1 c. cooked) .
  • 1 tsp salt .
  • 1 tbsp sugar .
  • 1 lb carrots .
  • 1 tbsp rice wine vinegar

Directions
  • Step #1 Depending on your noodles, you may need to start cooking them before or after you slice the carrots.
  • Step #2 Mine only take 5 mins so I did them afterwards.
  • Step #3 Regardless start boiling your water for them now.
  • Step #4 Wash & peel your carrots.
  • Step #5 With your vegetable peeler make long carrot "noodles".
  • Step #6 This is the bulk of the prep time.
  • Step #7 If I find an easier way to do this, I will amend this recipe.
  • Step #8 Sprinkle top the carrot peels with salt to draw out moisture.
  • Step #9 In a few mins they will be quite limp (like cooked noodles).
  • Step #10 If you are using fast cooking noodles, now would be the time to cook them.
  • Step #11 Mix the last three ingredients.
  • Step #12 Mix the limp carrot strips, the cooked & drained noodles, & the sauce mixture.
  • Step #13 Refrigerate at least one hr before serving(the cook time listed), but can be made as much as 24 hrs ahead of time.
