Thai Caramelised Pork Salad Recipe

Ingredients
  • Salad .
  • 1/4 c soy sauce .
  • 100 g salad leaves .
  • 1/2 c sugar .
  • 1 tsp star ground aniseed .
  • 1 tbsp gingerroot, shredded .
  • 650 g pork fillets or tenderloin .
  • 2 tbsps lime juice .
  • 1/4 c basil leaves .
  • 1/4 c mint leaves .
  • 4 spring onions, sliced .
  • 2 tbsps fish sauce .
  • 1/4 c coriander leaves .
  • 2 small red chilies, seeded & sliced

Directions
  • Step #1 place the soy, sugar, ginger,chillies, fish sauce lime juice & star anise in a deep fry pan over med-heat/flame.
  • Step #2 cook stirring for about 4-5 mins until the mixture thickens slightly.
  • Step #3 halve the pork lengthwise & add to the pan.
  • Step #4 cook for 4 mins on each side or until tender.
  • Step #5 remove pork from the pan & cool slightly.
  • Step #6 simmer the pan juices until thickened.
  • Step #7 toss together the salad leaves, spring onions & herbs.
  • Step #8 slice the pork drizzle with the pan juices & serve this with the salad.
