Crab Salad In Endive Leaves Recipe

Ingredients
  • 4 heads Belgian endive, trimmed, separated into spears .
  • 1 tsp dried oregano .
  • sliced fresh chives, for garnish .
  • 1/2 tsp salt .
  • 4 tbsps white wine vinegar .
  • 16 oz crabmeat, drained, picked over .
  • 1/4 tsp fresh ground black pepper .
  • 1/2 c extra-virgin olive oil .
  • 2 tbsps Dijon mustard

Directions
  • Step #1 Whisk the vinegar, oregano, mustard, salt & pepper In a large-ish bowl to mix.
  • Step #2 Gradually whisk in the oil.
  • Step #3 Add the crab meat & toss carefully to coat.
  • Step #4 Arrange the endive spears on a platter.
  • Step #5 Spoon the crab meat atop the endive spears.
  • Step #6 Sprinkle top with chives & serve.
