Mediterranean Tuna Sandwiches Recipe

Ingredients
  • 8 slices whole grain bread or pita bread .
  • 4 tsps balsamic vinegar .
  • 1/4 c red onions or sweet Spanish onions, finely sliced .
  • 4 romaine lettuce leaves or curly green lettuce leaves .
  • 1/4 c ripe green olives or ripe olives, sliced .
  • 4 tsps roasted red pepper olive oil .
  • 1/3 c sun-dried tomatoes packed in oil, drained .
  • 2 (6 oz) cans tuna in water, drained & flaked .
  • 3 tbsps mayonnaise (optional) or low-fat mayonnaise (optional) .
  • 1/4 c red bell peppers, finely sliced (optional) .
  • 1/4 tsp fresh ground black pepper .
  • 2 tsps capers (more to taste)

Directions
  • Step #1 Toast bread if desired.
  • Step #2 Combine olive oil & vinegar in a small bowl; brush oil mixture evenly over 1 side of each bread slice or inside pita pockets.
  • Step #3 Combine tuna & the rest of the ingredients (except lettuce).
  • Step #4 Place 1 lettuce leaf on each of 4 bread slices.
  • Step #5 Top the lettuce evenly with tuna mixture, & cover with remaining bread slices.
  • Step #6 Serve as soon as possible.
