Four Seasons Enchiladas Recipe

Ingredients
  • 1 c cheddar cheese or monterey jack cheese, shredded .
  • 1 (4 oz) can green chilies, sliced & drained .
  • 2 c cooked turkey or cooked chicken, sliced .
  • 4 oz cream cheese, softened .
  • 1 (16 oz) jar salsa .
  • 64 inches flour tortillas .
  • 1 (16 oz) can chili beans, in zesty sauce (optional)

Directions
  • Step #1 Preheat oven to 350ºF.
  • Step #2 Lightly grease a 9x13 inch baking dish.
  • Step #3 In a medium bowl, mix chile peppers & cream cheese.
  • Step #4 Stir in sliced turkey.
  • Step #5 Place the tortillas in a microwave oven.
  • Step #6 Heat for 1 min, or until the tortillas are softened.
  • Step #7 Spread about 2 heaping tbsps of the chile pepper mixture on each tortilla, & roll up.
  • Step #8 Place the rolled tortillas, seam-side down, in single layer in the prepared baking dish.
  • Step #9 In a medium bowl, mix the salsa & beans.
  • Step #10 Spoon the mixture over the enchiladas.
  • Step #11 Sprinkle top the top this with cheese.
  • Step #12 Bake 20 mins or til bubbly & lightly browned.
