Apricot Lemon Marmalade Recipe

Ingredients
  • 9 c sugar .
  • 1 2/3 c dried apricots .
  • 2 large lemons .
  • 1 large orange .
  • 7 c water, extra .
  • 2 tbsps water

Directions
  • Step #1 Remove & reserve seeds from unpeeled quartered orange & lemon.
  • Step #2 Put seeds & 2 tbsps of water in small bowl.
  • Step #3 Cover up & set aside.
  • Step #4 Blend or process sliced orange, lemons & apricots, in batches, until finely sliced.
  • Step #5 Combine fruit mixture with the extra water in large saucepan; bring to a boil.
  • Step #6 Reduce heat & let simmer, covered, 45 mins.
  • Step #7 Transfer mixture to large heatproof bowl; cover.
  • Step #8 Stand fruit mixture & seed mixture, separately, overnight.
  • Step #9 Drain seeds over small bowl; reserve liquid & discard seeds.
  • Step #10 Measure fruit mixture & allow 1 c sugar to each c of fruit mixture.
  • Step #11 Return fruit mixture with reserved seed liquid to pan; bring to a boil.
  • Step #12 Add sugar & stir over heat, without boiling, until sugar dissolves.
  • Step #13 Boil, stirring every once in awhile, uncovered, about 30 mins or until marmalade jells when tested.
  • Step #14 Stand 5 mins.
  • Step #15 Pour hot marmalade into hot sterilised jars, seal while hot.
