Garlic And Rosemary 'smashed' Potatoes Recipe

Ingredients
  • 1/4 c sour cream .
  • 4 garlic cloves .
  • 2 tbsps butter .
  • 1 tbsp fresh rosemary, minced .
  • salt & pepper, to taste .
  • 1 1/2 lbs red potatoes, skin left on

Directions
  • Step #1 Preheat oven to 375 degrees.
  • Step #2 Place garlic cloves in a small oven-safe pan or a piece of foil wrap & roast until lightly browned, about 20 to 30 mins.
  • Step #3 In a large pot, add potatoes & fill with water.
  • Step #4 Cover up & bring to a boil until potatoes are softened, about 30 to 35 mins.
  • Step #5 Drain potatoes through a colander; return to pot (not on stove) & add sour cream, butter, roasted garlic cloves & rosemary.
  • Step #6 Mash the potatoes until few lumps remain.
  • Step #7 Spice up with salt & pepper & serve as soon as possible.
