Honey-almond Biscotti
Ingredients
1/2 tsp vanilla .
3/4 c sugar .
2 tbsps lemon peel (grated) .
1 c almonds (sliced) .
1/2 c butter .
1 tbsp anise seed .
1/2 tsp salt .
2 tbsps orange peel (grated) .
3 tsps baking powder .
3 eggs .
3 c flour
Directions
Step #1 Cream butter & sugar.
Step #2 add eggs one at a time beating well after each addition.
Step #3 Add vanilla.
Step #4 Sift together flour, baking powder & salt & ad slowly to creamed mixture.
Step #5 Stir in lemon & orange peels, anise seeds & nuts & mix well.
Step #6 divide dough into 3 parts & shape each into long roll about 1 1/2 inches in diameter.
Step #7 Place rolls on cookie sheet several inches apart & flatten rolls somewhat.
Step #8 Bake at 350F for 15 mins.
Step #9 Remove & slice rolls crosswise 3/4 inches.
Step #10 Lay cut side down & bake extra 7 mins.
Step #11 Flip to other side of cookie & bake another 7 mins.
Step #12 Makes approx 4 dozen biscotti.
Step #13 ENJOY! Freezes well.
Step #14 Note: If you want sweeter, increase sugar to 1 full c.
