Panna Cotta With Dried Fruit Compote Recipe

Ingredients
  • 3 c buttermilk .
  • 2 c water .
  • 1/2 c sugar .
  • 2-3 star anise .
  • 1/2 c white wine .
  • Dried Fruit Compote .
  • 7 tbsps cold water .
  • 1 c amaretto liqueur .
  • 2 1/2 tsps plain gelatin .
  • Panna Cotta .
  • 1 1/2 c sugar .
  • 1 vanilla bean, seeds only .
  • 1 1/3 c dried figs .
  • 3 whole cloves .
  • 2 1/3 c raisins (California, none other) .
  • 2 tsps orange zest .
  • 3 2/3 c heavy cream .
  • 1/2 c red wine .
  • 1/3 tsp salt .
  • 2 cinnamon sticks .
  • 2 tsps lemon zest .
  • 1 1/3 c dried cherries

Directions
  • Step #1 Panna Cotta.
  • Step #2 In a small bowl, sprinkle gelatin over cold water.
  • Step #3 Let stand for 3 mins.
  • Step #4 Meanwhile in large saucepan, heat & stir cream & sugar over low heat/flame until sugar is all dissolved.
  • Step #5 Stir in softened gelatin until dissolved.
  • Step #6 Then, add buttermilk & salt.
  • Step #7 Divide & spoon into 30 individual glass bowls or 1 large bowl to divide later.
  • Step #8 Cover up & put in the fridge until set, at least 3 hrs for individual servings or up to 24 hrs for large bowl.
  • Step #9 Dried Fruit Compote.
  • Step #10 In large nonreactive pan, wines, mix water, fruits & spices; bring to boil.
  • Step #11 Remove from heat & let this stand 15 mins; drain, reserving 1/2 liquid, & reduce remaining liquid by one half.
  • Step #12 Stir sugar, zests & liqueur into reduced liquid.
  • Step #13 Add fruits; stir this together & put in the fridge until ready to serve.
  • Step #14 To Serve.
  • Step #15 Remove panna cotta from individual molds or scoop portions from large bowl onto individual serving plates.
  • Step #16 Spoon dried fruit compote on top.
