Chocolate Yule Log Recipe

Ingredients
  • 1 1/2 tsps vanilla extract
  • 1 tbsp brewed coffee
  • 1 1/2 tsps instant coffee granules
  • MOCHA CREAM FILLING:
  • MOCHA BUTTERCREAM FROSTING:
  • 1/3 c butter, softened
  • 1/2 c confectioners' sugar
  • 1/2 tsp cream of tartar
  • 1 c sugar, divided
  • 1/2 c cake flour
  • 1 c whipping cream
  • 5 eggs, separated
  • 1/4 c baking cocoa
  • 2 c confectioners' sugar
  • 1/3 c baking cocoa
  • 1/4 tsp salt
  • 2 tbsps milk

Directions
  • Step #1 Line a 15-in.
  • Step #2 x 10-in.
  • Step #3 x 1-in.
  • Step #4 baking pan with parchment paper; grease the paper.
  • Step #5 Place egg whites in a small mixing bowl; let this stand at about room temp for 30 mins.
  • Step #6 In a large mixing bowl, beat egg yolks on high until light & fluffy.
  • Step #7 Gradually add 1/2 c sugar, beating until thick & lemon-colored.
  • Step #8 Combine flour, cocoa & salt; slowly add to egg yolk mixture until mixed.
  • Step #9 Beat egg whites on medium until foamy.
  • Step #10 Add cream of tartar; beat until soft peaks form.
  • Step #11 Gradually add in the remaining sugar, beating on high until stiff peaks form.
  • Step #12 Stir a fourth into chocolate mixture.
  • Step #13 Fold in remaining egg whites until no streaks remain.
  • Step #14 Spread batter evenly in prepared pan.
  • Step #15 Bake at 350 degrees F for 12-15 mins or until cake springs back (do not overbake).
  • Step #16 Cool for 5 mins; invert onto a linen towel dusted with confectioners' sugar.
  • Step #17 Peel off parchment paper.
  • Step #18 Roll up in the towel, starting with a short side.
  • Step #19 Cool on a wire rack.
  • Step #20 In a mixing bowl, beat cream until it begins to thicken.
  • Step #21 Add sugar & coffee granules.
  • Step #22 Beat until stiff peaks form; chill.
  • Step #23 Unroll cooled cake; spread filling to within 1/2 in.
  • Step #24 of edges.
  • Step #25 Roll up again.
  • Step #26 Place on serving platter; chill.
  • Step #27 In a mixing bowl, beat frosting ingredients until smooth.
  • Step #28 Frost cake.
  • Step #29 Using a fork, make lines resembling tree bark.
