Chicken Pasta Salad With Cashews And Dried Cranberries Recipe

Ingredients
  • 1 1/2 c seedless green grapes, halved
  • 4 c cubed cooked chicken
  • 2 c dried cranberries
  • 3 c bow tie (farfalle) pasta
  • 1/2 c creamy salad dressing (such as Miracle Whip™)
  • 1 1/2 c seedless red grapes, halved
  • 2 c thinly sliced celery
  • 2 (5 oz) cans water chestnuts, drained & quartered
  • 2 c cashew halves
  • 1/2 c mayonnaise
  • 1/2 c thinly sliced green onions
  • 1 (16 oz) bottle bottled coleslaw dressing

Directions
  • Step #1 Bring a large pot of lightly salted water to a boil.
  • Step #2 Add pasta & cook for 8 to 10 mins or until al dente; drain, & set aside.
  • Step #3 In a medium bowl, mayonnaise, whisk together coleslaw dressing, & creamy salad dressing.
  • Step #4 In a large bowl, green grapes, water chestnuts, red grapes, mix pasta, celery, chicken, & green onions.
  • Step #5 Stir in dressing, & mix well.
  • Step #6 Place the salad in the refrigerator to marinate for 2 hrs, or overnight.
  • Step #7 Mix in cashews & dried cranberries just before serving.
  • Step #8 Serve cold.
